Ordinary knives often cause excessive cell damage, which leads to the release of pungent, harsh-tasting compounds. sen knives have a fine cutting edge that slices cleanly without damaging cell walls. This helps suppress the formation of these compounds and retains the intrinsic sweetness and umami contained within the cells. Cutting with a sen knife brings out the full deliciousness of ingredients while preserving their natural texture and mouthfeel.

The effectiveness of sen knives at reducing cell wall rupture has been scientifically verified. An experiment was conducted to measure the concentration of pyruvic acid, a compound that increases when vegetal cells are damaged. The lower the concentration of pyruvic acid, the less damage the ingredient’s cells have sustained.
The results showed that even after some time had passed, Japanese leeks cut with sen knives had lower levels of pungent, harsh-tasting compounds than those cut with ordinary knives. In other words, sen knives help preserve the natural sweetness of Japanese leeks.
* This experiment was performed by using knives to cut cylindrical slices of Japanese leeks (from Saitama Prefecture), soaking them in distilled water, and then measuring the concentration of pyruvic acid in the eluted liquid. This process was performed three times, with a total of six samples taken at intervals of 5 to 10 minutes.
